Enchilada Lasagna

  • 1 pkg. corn or flour tortillas (in refrigerator section)
  • 1 can enchilada sauce
  • 1 pkg. taco seasoning (follow directions on pkg.)
  • 1 lb. hamburger (brown with taco seasoning)
  • 1 (about 16 oz.) pkg. shredded Jack cheese or Mexican cheese, mixed
  • 1 large onion raw, chopped

Directions

    In 9-inch round casserole dish, pour a little enchilada sauce. Place 3 tortillas and add a little sauce.

    Add 1/2 hamburg mixture and 1/2 onion.

    Add some shredded cheese.

    Repeat, layering tortillas, sauce, hamburg, onion and cheese, then finish with tortillas and sauce, then rest of cheese.

    Bake covered at 350° for 30 minutes, then uncovered about 15 minutes.

    Let stand before serving.

    Serve with salsa, sour cream, back olives, chopped tomatoes, lettuce or whatever you like.
