- Chili Colorado (liquid - or you can substitute on 10-ounce can Enchilada sauce if Chili Colorado is not available)
- 10 - 12 corn tortillas
- oil
- onion (desired amount)
- 8 oz block cheese (Authentic Mexican-style Chihuahua Gran, Queso Asado, or you can use Monterey Jack)
Directions

1Cut up onion and cook in small amount of oil.

2Set aside. Fry your tortillas in just a little bit of oil in the bottom of a pan. Drain the grease off of them.

3Lay tortillas flat.

4Spoon or spread chili colorado or canned Enchilada sauce over tortillas one at a time.

5Then put onion on them and shredded cheese.

6Roll them up and place them side by side in a shallow baking dish.

7Cover again with small amount of chili sauce.

8Bake at 350 degrees for just a few minutes until heated through.
