  • 2 pkg. enchilada mix
  • 1 (48 oz.) can tomato juice
  • 2 (15 oz.) cans chili (no beans)
  • 2 pkg. flour tortillas
  • 2 lb. hamburger
  • 1 onion, chopped
  • 1 jar chopped green olives
  • 2 lb. Longhorn cheese, shredded

Directions

    Combine enchilada mix, tomato juice and chili (without beans); set aside.

    Brown hamburger; drain and let cool.

    Add onion, olives and 1/2 of shredded cheese.

    Dip tortillas in the tomato juice mixture.

    Put meat mixture in tortilla and roll up.

    Place side by side in baking pan.

    Pour leftover sauce over tortillas; top with remaining shredded cheese.

    Bake at 350° for about 20 minutes, or until done.
