- 2 pkg. enchilada mix
- 1 (48 oz.) can tomato juice
- 2 (15 oz.) cans chili (no beans)
- 2 pkg. flour tortillas
- 2 lb. hamburger
- 1 onion, chopped
- 1 jar chopped green olives
- 2 lb. Longhorn cheese, shredded
Directions

1Combine enchilada mix, tomato juice and chili (without beans); set aside.

2Brown hamburger; drain and let cool.

3Add onion, olives and 1/2 of shredded cheese.

4Dip tortillas in the tomato juice mixture.

5Put meat mixture in tortilla and roll up.

6Place side by side in baking pan.

7Pour leftover sauce over tortillas; top with remaining shredded cheese.

8Bake at 350° for about 20 minutes, or until done.
