- 1 head endive
- 2 hard-boiled eggs
- 3 slices bacon
- 2 tsp. sugar
- 1 1/2 tsp. flour
- 1 tsp. salt
- 4 tsp. vinegar
- 3/4 c. cream
Directions

1Wash and chop the endive.

2Fry bacon until crisp; remove from drippings; crumble.

3Mix salt, sugar and flour; add vinegar.

4Stir until well blended.

5Cook sauce in 2 tablespoons bacon drippings until thickened, adding cream gradually.

6Pour mixture over endive and mix together lightly.

7Garnish with chopped eggs and crumbled bacon.
