- 1 c. spinach, coarsely chopped
- 1 small cucumber
- 1 medium tomato
- 1 to 2 c. sprouts
- red clover lentils
- any raw vegetables (such as carrots, celery, mushrooms, cabbage, beets, radishes)
- 1/4 c. olives
- 1/2 c. beans
Directions

1In a large bowl, mix all ingredients.

2Add 1/4 to 1/3 cup Light Dressing.

3Toss well.

4The tomatoes and cucumbers are important because their water content will help digest the more fibrous greens.
