Ingredients

  • 3 c. lettuce, broken into bite size pieces
  • 1 c. spinach, coarsely chopped
  • 1 small cucumber
  • 1 medium tomato
  • 1 to 2 c. sprouts
  • red clover lentils
  • any raw vegetables (such as carrots, celery, mushrooms, cabbage, beets, radishes)
  • 1/4 c. olives
  • 1/2 c. beans

Directions

    In a large bowl, mix all ingredients.

    Add 1/4 to 1/3 cup Light Dressing.

    Toss well.

    The tomatoes and cucumbers are important because their water content will help digest the more fibrous greens.
