- 1 Tbsp. oil
- 1 medium onion, minced
- 6 large tomatoes, peeled and chopped
- 2 (10 1/2 oz.) cans beef broth
- 1 c. escarole, chopped
- 1/2 tsp. salt
- dash of pepper
- 3 tsp. Worcestershire sauce
Directions

1In large soup or spaghetti pot, heat oil.

2Add minced onion; saute lightly, just until onion is transparent (about 5 minutes). Add tomatoes, beef broth, escarole and all seasonings; cook, uncovered, over medium heat until tomatoes are cooked down and escarole is tender, approximately 20 to 30 minutes.

3Serve hot. Makes 4 servings.
