Ingredients

  • 4 cups Strawberries
  • 2 teaspoons Balsamic Vinegar OR Pomegranate Juice
  • 3 Tablespoons Castor (superfine) Sugar
  • 2-1/2 cups Thickened (whipping) Cream
  • 6 whole Meringue Nests
  • 1 cup Raspberries (Fresh Or Frozen)

Directions

    Hull and quarter the strawberries and place in a bowl with the balsamic and sugar; mix together gently. Set aside.

    In a large mixing bowl, whip the cream until it is thick but still soft. Bash up the meringues into small chunks and dump into the cream. Add raspberries and strawberries (leaving a few aside to garnish if you want to be all posh) and fold together gently.

    Serve immediately (you can make it in advance if you want, but the meringues will go soft).

    I use the store-bought meringues but you can make your own if you want, or if you screwed up a pavlova, use that instead.
