  • 5 oz. thinly sliced cooked beef
  • 1 Tbsp. lime juice
  • 1/4 tsp. garlic powder
  • 1/4 tsp. crushed red pepper
  • 10 (8-inch) flour tortillas
  • 4 medium bell peppers
  • 1 medium onion
  • 1 c. canned pinto beans, rinsed and drained
  • 2/3 c. fat-free plain yogurt
  • 1/2 c. salsa

    Heat oven to 325°.

    Cut beef into 1/2-inch strips.

    Mix beef, lime juice, garlic powder and pepper.

    Wrap tortillas in foil. Heat in oven about 15 minutes or until warm.

    Cut bell peppers into strips.

    Cut onion into slices; separate into rings.

    Spray 10-inch skillet with cooking spray.

    Cook and stir onion in skillet 1 minute.

    Add bell peppers.
