- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1 to 1 1/2 cups coarsely chopped, crumbled or shredded cheese
- Dijon mustard (optional)
- Salt and freshly ground pepper
- 6 large eggs, separated
- Freshly grated Parmesan cheese
Directions

1Preheat the oven to 400.

2Butter an 8-by-12-inch glass or ceramic baking dish.

3In a medium saucepan, melt the butter over moderate heat.

4Add the flour and whisk until blended and bubbling.

5Gradually whisk in the milk and bring to a boil, whisking constantly; simmer for 3 minutes.

6Gradually whisk in the cheese until melted.

7Add mustard if desired and season generously with salt and pepper.

8Whisk in the egg yolks.

9In a bowl, beat the egg whites until firm.

10Whisk half of the whites into the souffle base, then fold the base into the remaining whites.

11Pour the mixture into the baking dish and sprinkle with Parmesan.
