Farmers' Corn Cakes

  • 1 1/2 c. plain flour
  • 1/4 c. yellow cornmeal
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 4 eggs, beaten
  • 1 1/3 c. milk
  • 1/3 c. butter, melted
  • 2 c. drained canned corn kernels or fresh corn kernels, cooked and cut from cob

    together flour, cornmeal, baking powder and salt. Set aside.

    In another bowl blend eggs, milk and butter together.

    flour mixture; stir just until moistened. (Batter will be lumpy.)

    fold in corn.

    To cook pour about 1/4 cup of batter into a hot lightly greased skillet. Cook until golden brown on both sides.
