- 1 1/2 c. plain flour
- 1/4 c. yellow cornmeal
- 2 tsp. baking powder
- 1 tsp. salt
- 4 eggs, beaten
- 1 1/3 c. milk
- 1/3 c. butter, melted
- 2 c. drained canned corn kernels or fresh corn kernels, cooked and cut from cob
Directions

2together flour, cornmeal, baking powder and salt. Set aside.

3In another bowl blend eggs, milk and butter together.

5flour mixture; stir just until moistened. (Batter will be lumpy.)

7fold in corn.

8To cook pour about 1/4 cup of batter into a hot lightly greased skillet. Cook until golden brown on both sides.
