Ingredients

  • 1 (10 oz.) can white chicken or leftover chicken cut into bite size pieces
  • 2 (14 1/2 oz.) cans chicken broth
  • 1 c. carrots
  • 1 c. celery
  • 1 c. zucchini
  • 1 c. potato
  • 1 c. Minute rice
  • 1 onion
  • 1 clove garlic
  • basil
  • tarragon
  • fresh cilantro
  • oregano

Directions

    Mix all ingredients, except rice together, in large pan.

    Add about 2 to 3 cups of water and bring to a boil.

    Add rice and let simmer until vegetables are done.
