- 2 tablespoons vegetable oil
- 1 shallot, chopped
- 2 garlic cloves, minced
- 2 stalks celery, diced
- 12 lb mushroom, thinly sliced
- 1 red bell pepper, diced
- 1 tablespoon chopped fresh tarragon or 1 tablespoon Italian parsley
- 14 teaspoon fine salt
- 2 cups whole milk
- 2 cups fish stock or 2 cups chicken stock
- 12 lb raw shrimp, peeled deveined and chopped
- 6 ounces bay scallops
- 1 (5 ounce) can baby clams, rinsed and drained
Directions

1In a soup pot, heat oil over medium flame until shimmering.

2Add shallot, garlic, celery, mushrooms, bell pepper, tarragon and salt.

3Saute until vegetables release their water and most of it has evaporated, about 10 minutes.

4Add milk and stock and bring to a gentle boil.

5Add shrimp, scallops, and clams.

6Simmer about 5 minutes, until scallops are opaque and firm.
