- 2 lb. boneless pork loin roast
- 2 large cloves garlic, pressed
- 3/4 c. Dole golden raisins
- 1 sprig fresh rosemary (4 inches long)
- 1 3/4 c. Dole canned pineapple juice
- 3 Tbsp. currant jelly
- 1 Tbsp. minced crystallized ginger
- 1 Tbsp. cornstarch
- Dole sliced pineapple for garnish
Directions

1Cut a slit lengthwise through center of pork (not all the way through).

2Lay flat.

3Rub with garlic, salt and pepper to taste; sprinkle with raisins.

4Close roast and tie with a string.

5Place rosemary on top.

6Wrap roast with heavy-duty foil.

7Poke several small holes through foil into pork on all sides.

8Place in roasting pan.

9Roast in a 350° oven for 1 to 1 1/4 hours.
