Festive Pork Roast

  • 2 lb. boneless pork loin roast
  • 2 large cloves garlic, pressed
  • 3/4 c. Dole golden raisins
  • 1 sprig fresh rosemary (4 inches long)
  • 1 3/4 c. Dole canned pineapple juice
  • 3 Tbsp. currant jelly
  • 1 Tbsp. minced crystallized ginger
  • 1 Tbsp. cornstarch
  • Dole sliced pineapple for garnish

    Cut a slit lengthwise through center of pork (not all the way through).

    Lay flat.

    Rub with garlic, salt and pepper to taste; sprinkle with raisins.

    Close roast and tie with a string.

    Place rosemary on top.

    Wrap roast with heavy-duty foil.

    Poke several small holes through foil into pork on all sides.

    Place in roasting pan.

    Roast in a 350° oven for 1 to 1 1/4 hours.
