Feta Cheese with Egg

  • 1 clove garlic
  • 1 teaspoon ground coriander
  • 2 tablespoons extra-virgin olive oil
  • 2 slices feta cheese
  • 1 egg
  • 1 tomato, chopped (optional)

Directions

    In a small frying pan, fry the garlic with the coriander in 1 tablespoon oil for moments only, until the aroma rises.

    Lay the slices of cheese on top and leave over medium heat until the cheese begins to fall apart.

    Break open the egg over it, and if you like, surround with chopped tomato.

    Cook until the egg is done to your liking.

    My cousin Steve, who gave me this recipe, puts a lid on so that the top of the egg becomes opaque and misty.

    Eat with a dribble of the remaining oil.
