- 1 14.5 oz can diced tomatoes-no salt added
- 2 cups broccoli florets
- 2 cups asparagus
- 4 oz. mini bella sliced mushrooms
- 6 sheets thawed fillo dough
- 1/3 cup shredded part skim mozarella cheese
- 3 tbsp. shredded parmesan cheese
- 1/8 tsp. crushed red pepper flakes

1Blanch the broccoli and asparagus (3 min then ice bath) Cut the broccoli and asparagus into small pieces. Drain the tomatoes

2Preheat oven to 400 degrees

3Lightly spray foil covering on 15x10 cookie sheet.

4Working quickly stack the fillo sheets on the cookie sheet, spray lightly between sheets

5Spread tomatoes evenly over the fillo dough sheets

6Spread the vegetables evenly over the sheets. Mix the cheese and pepper flakes together and spread evenly over the pizza

7Bake 15 min @400 degrees.

8Slide off cookie sheet, cut and serve
