- 4 large Potatoes
- 6 large Eggs
- 1 1/2 large Slice of fully cooked ham

1Wash and dice potatoes - leave skins on

2Heat small amount of EVOO in a large skillet, add diced potatoes.

3Cook on medium.

4Dice ham slices and add to skillet full of potatoes.

5Salt and pepper to your liking.

6Cover.

7Cook for about 15 min or until potatoes are tender -stir occasionally

8In a 2nd pan, scramble and cook all 6 eggs.

9Add scrambled eggs to potatoes and ham skillet.

10Mix well.
