  • 4 large Potatoes
  • 6 large Eggs
  • 1 1/2 large Slice of fully cooked ham

Directions

    Wash and dice potatoes - leave skins on

    Heat small amount of EVOO in a large skillet, add diced potatoes.

    Cook on medium.

    Dice ham slices and add to skillet full of potatoes.
  5. 5
    Salt and pepper to your liking.

    Cover.

    Cook for about 15 min or until potatoes are tender -stir occasionally

    In a 2nd pan, scramble and cook all 6 eggs.

    Add scrambled eggs to potatoes and ham skillet.

    Mix well.
