  • 1 lb. cooked white fish
  • 2 c. mashed potatoes
  • 1 raw egg
  • 1 hard boiled chopped egg (optional)
  • 1/4 tsp. lemon juice
  • 1/4 tsp. tarragon vinegar
  • 1 Tbsp. chopped parsley
  • Salt
  • Pepper
  • Flour
  • 4 Tbsp. stale bread crumbs

Directions

    Flake fish; remove any bones. In a mixing bowl, add fish to mashed potatoes and raw egg.

    When mixed well, add lemon juice, vinegar, parsley, hard boiled egg, salt and pepper.

    The mixture will be rather sticky.

    Shape into small rounds with floured fingers and roll into breadcrumbs.

    Refrigerate 1 hour.

    Fry in hot oil in frying pan over medium heat or deep fry.

    Should be golden brown and crispy on the outside.
