- 2 lb. haddock
- 2 oz. diced salt pork
- 2 onions, sliced
- 4 large potatoes, diced
- 1 c. chopped celery
- 1 bay leaf, crumbled
- 1 tsp. salt
- pinch of pepper
- 1 qt. milk
- 2 Tbsp. butter or margarine
Directions

1Simmer haddock in 2 cups of water for 15 minutes; drain. Reserve broth.

2Remove bones from fish.

3Saute diced salt pork until crisp.

4Remove pork; reserve fat and saute onions until brown.

5Add fish, potatoes, celery, bay leaf, salt and pepper. Pour in fish broth which was reserved and enough water to make 3 cups of liquid.

6Simmer for 30 minutes.
