- 8 sole fillets
- 1 tablespoon parsley
- 1 teaspoon thyme
- 1 tablespoon fresh lemon juice
- salt, and paprika to taste
- 3 ounces smoked salmon, sliced
- 1 cup fish stock or 1 cup chicken stock

Directions

1Lay the fillets out flat.

2Combine herbs, lemon juice and seasonings, spread over fillets.

3Lay salmon over herb mixture.

4Roll up fish, secure with toothpicks.

5Stand rolls in a flat baking dish and pour over the stock, cover and bake at 200°C degrees (400°F) for 10-15 minutes depending on the thickness of the fish.

6Top each turban with a caper and parsley sprig, garnish the platter with parsley or fresh herbs.
