- 4 medium potatoes, peeled and quartered
- 1 c. boiling water
- 1/2 c. evaporated milk
- 1 tsp. salt
- dash of black pepper
Directions

1Cook potatoes in boiling water in tightly covered saucepan about 20 minutes or until tender.

2Drain and mash.

3Add evaporated milk, salt and pepper until fluffy and light.

4Add more evaporated milk for softer mashed potatoes.
