Fluffy White Rice

- 1 cup long-grain white rice
- 1 knob unsalted butter or a tbsp of olive oil
- 1 3/4 cup water
Directions

1Rinse the rice in a few changes of water.

2Then drain well using a sieve.

3(Rinsing the rice in a number of different waters will remove loose starch, making the rice less sticky.)

4In a medium pot with a tight fitting lid, combine the water, the rice, salt and butter.

5(Tight fitting lid will keep all the steam in, if the lid is loose, put a clean kitchen towel between the pot and lid.)

6Bring to the boil over high heat.

7As soon as the water is boiling lower the heat to simmer.

8Cover with the lid also.

9Cook at a gentle simmer until the water is all absorbed and rice has become tender.

10Normally takes about 12-14 minutes.

11(Tip: If lifting lid to check rice, replace it as quickly as possible)

12When step 5 is done remove the pot from the heat and let it sit, undisturbed with the lid on, for a minimum of 5 minutes and a maximum of 30 minutes.

13Remove the lid, and fluff the rice gently with a fork.

14Serve immediately.
