  • 4 boneless chicken breast halves
  • 1 tbsp. butter
  • 1 onion, sliced
  • 1-1/2 tsp. curry powder
  • 1 fresh tomato, chopped
  • 1/4 tsp. cayenne pepper
  • 1/2 cup milk

Directions

    In a frying pan, brown the chicken in butter.

    After browned, add the onions and curry powder.

    Reduce heat, stir ingredients and cook over low heat for 15 to 20 minutes.

    Turn the chicken during this cooking.

    Add cayenne and tomatoes; stir well.

    Cover and simmer 1 hour.

    Add milk, and heat through before serving.
