Foolproof Buttercream

  • 70 grams Unsalted butter
  • 1 Egg white
  • 1 1/2 tbsp Honey

Directions

    Put butter in a large bowl, and microwave for 20 ~ 30 seconds.

    When it has softened, mix well with a whisk until white and smooth.

    Whip the egg white and make a stiff meringue (until stiff peaks form.)

    Add honey to a heatproof dish, and microwave for about 30 seconds.

    When it starts to bubble, it's ready.

    Drizzle in the honey little by little like a thread into the Step 2 meringue, and continue mixing.

    When you have finished adding it all, whip some more to make the meringue mixture shiny and stiff.

    Add Step 4 meringue into Step 1 butter in several batches, mix well, then it's done.

    Tip: Add a small amount of meringue, and mix well, then repeat.
