French Fried Zucchini

  • 3/4 c. flour
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/8 tsp. pepper
  • salad oil for frying
  • 3/4 c. beer (room temperature)
  • 2 eggs, separated
  • 2 Tbsp. salad oil
  • 3 medium zucchini

    In medium bowl, mix flour, salt, garlic powder and pepper. In small bowl, mix beer, egg yolks and salad oil.

    Add to dry ingredients and stir just until combined (batter will be lumpy). Cover with plastic wrap; set aside for 45 minutes.

    Cut zucchini into 2 1/2 x 1/4-inch julienne strips; set aside.

    Beat egg whites until stiff.

    Fold into batter and dip zucchini in to coat.

    In large saucepan or deep fat fryer, heat 1-inch oil to 375° on deep fat thermometer.

    Add zucchini a few at a time to hot oil.

    Fry, turning until golden brown.

    Remove with slotted spoon.

    Drain on paper towel.
