- 2 pounds potatoes, unpeeled
- Vegetable oil
Directions

1Scrub potatoes to clean.

2Slice potatoes into large, fry-like strips.

3Add sliced potato to bowl and cover with water.

4In large pot or deep fryer heat oil to 375 degrees.

5Drain potatoes and pat with napkin until completely dry.

6Blanch potatoes by briefly plunging into oil and frying until brown and crispy.

7Reheat oil to 375 degrees.

8Add blanched potatoes to oil and cook until tender but not browned.

9Remove fries to paper towel to drain.

10Season and serve
