- 80 small, fresh raw mushrooms of uniform size
- 1 Tbsp. chopped scallions or green onions
- 1 Tbsp. butter
- 1 c. heavy cream
- 1 Tbsp. fine dry sherry
- 1/2 tsp. salt
- 1/9 tsp. pepper
Directions

1Wipe mushrooms dry with damp cloth.

2Remove stems and mince. Saute stems and scallions in butter 2 to 3 minutes, stirring.

3Add cream, sherry, salt and pepper.

4Cook until thickens, about 5 to 7 minutes.

5Fill mushroom caps with mixture.

6Set aside ready to broil.

7Place under broiler just enough to slightly brown.
