  • 2 c. sugar
  • 1 1/2 c. cooking oil
  • 2 tsp. vanilla extract
  • 2 well beaten eggs
  • juice of 1/2 lemon
  • 1 tsp. salt
  • 3 c. flour
  • 1 1/4 tsp. soda
  • 3 c. peeled, chopped fresh apples
  • 1 1/2 to 2 c. chopped pecans

Directions

    Combine sugar, oil, vanilla, eggs, lemon juice and salt in a mixing bowl.

    Beat well.

    Mix flour and soda.

    Add to first mixture and beat well again.

    Add apples and pecans.

    Mix well. Bake in a tube pan which has been greased and dusted with flour. Bake 1 1/2 hours at 325°.
