  • 3 eggs
  • 2 c. sugar
  • 1 1/2 c. Wesson oil
  • 3 c. sifted flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 c. nuts (optional)
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • 1 tsp. cinnamon
  • 2 tsp. vanilla
  • 3 c. apples, diced fine
  • 1 c. coconut (optional)

Directions

    Cream the eggs, sugar and oil.

    Add flour and spices.
  3. 3
    Peel and dice apples.
  4. 4
    Add apples and vanilla to creamed mixture.
  5. 5
    Stir in nuts.
  6. 6
    Bake at 350° for 1 hour.

    (Mine takes 1 hour and 15 to 30 minutes.)
