Fresh Apple Nut Cake

  • 3 whole Eggs
  • 1-3/4 cup Sugar
  • 1 cup Applesauce
  • 2 cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Pumpkin Pie Spice
  • 1/4 teaspoons Salt
  • 10 whole Small Apples, Peeled, Cored And Diced
  • 1/2 cups Chopped Pecans

    Preheat oven to 350 F. In a large bowl beat eggs and sugar. Add applesauce. Beat well. Add dry ingredients (flour through salt) and mix well. Fold in apples and nuts.

    Pour into a greased 9x13 pan. Bake at 350 F for 40-60 minutes or whenever the cake starts to leave the sides of the pan. Ovens vary in temperature, so time will vary. I usually find that 50 minutes for 10 chopped apples is plenty of time. When done, a toothpick inserted into the center of the cake will come out clean. Remove from oven and serve warm.
