Fresh Corn Casserole

  • 3 or 4 slices bacon, fried, drained and crumbled
  • 2 c. fresh corn, cut off (about 4 ears)
  • 1/2 c. green pepper, chopped
  • 1/4 c. onion, chopped
  • 1 large tomato, peeled and chopped
  • 1/2 tsp. salt
  • 1/8 tsp. pepper

    Reserve 1 Tbsp. bacon drippings in skillet.

    Add corn, green pepper and onion.

    Cook over high heat 5 minutes, stirring often. Stir in bacon, tomatoes and seasonings.

    Spoon into greased, shallow baking dish.

    Bake at 350° for 10 to 15 minutes.
