Ingredients
- 4 ears Fresh Corn (about 2 Cups Of Kernels If Using Frozen)
- 2 whole Jalapeno Peppers
- 1/4 cups Cilantro, Chopped
- Salt To Taste
- 2 sprigs Green Onions, Finely Chopped
- 1 teaspoon Sugar
- 1 whole Lime
- Olive Oil To Lightly Brush Peppers
Directions

1Shuck and boil the ears of corn for 4-5 minutes until tender, then remove from the water and allow them to cool.

2Then carefully slice corn kernels off of the cobs into a bowl.

3Meanwhile, brush jalapeno peppers lightly with olive oil and grill over medium heat until they are lightly charred on outside.

4Then remove them from the heat and allow the peppers to cool.

5Once cool, remove seeds, and finely chop peppers.

6Add to the corn.

7Add cilantro, salt, green onion, and sugar to corn mixture.

8Juice the entire lime into the corn mixture and stir.

9Serve with chips!
