Fresh Cranberry Fruitcake

Ingredients
- 2 c. flour
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. salt
- juice and rind of 1 orange
- 2 Tbsp. oil
- 1 egg, well beaten
- 1/2 c. chopped nuts
- 2 c. cranberries, halved
Directions

1Preheat oven to 350°.

2Combine flour, sugar, baking powder, baking soda and salt in a large bowl.

3In a measuring cup, measure orange juice and add water, if necessary, to equal 3/4 cup.

4Add grated orange rind and oil and stir in beaten egg.

5Pour this mixture into the dry ingredients.

6Mix just enough to dampen. Fold in nuts and cranberries.

7Spoon into a greased loaf pan. Bake 50 minutes to an hour.

8Remove from pan to cool.

9Store overnight for easy slicing.
