  • 3 1/2 c. gooseberries
  • 2 Tbsp. quick cooking tapioca
  • 1 1/2 c. sugar
  • 1/4 tsp. salt
  • 1 tsp. grated orange peel
  • 2 Tbsp. butter, melted
  • pastry for 2 crust 9-inch pie

Directions

    Mix together berries, tapioca, sugar, salt, orange peel and butter.

    Let stand for 215 minutes.

    Pour into pastry shell. Cover with top crust and slit to vent.

    Bake at 450° for 15 minutes.

    Reduce the temperature to 350° and bake for 30 minutes.
