- 3 1/2 c. gooseberries
- 2 Tbsp. quick cooking tapioca
- 1 1/2 c. sugar
- 1/4 tsp. salt
- 1 tsp. grated orange peel
- 2 Tbsp. butter, melted
- pastry for 2 crust 9-inch pie
Directions

1Mix together berries, tapioca, sugar, salt, orange peel and butter.

2Let stand for 215 minutes.

3Pour into pastry shell. Cover with top crust and slit to vent.

4Bake at 450° for 15 minutes.

5Reduce the temperature to 350° and bake for 30 minutes.
