Fresh Grapefruit Salad

  • 6 small grapefruit, cut in half
  • 1 (15 1/4 oz.) can crushed pineapple, drain and save juice
  • 1 (6 oz.) box sugar-free lemon gelatin
  • 1 (3 oz.) box sugar-free lemon gelatin

Directions

    Scoop out sections of fruit from grapefruit and cut out membranes.

    Drain the grapefruit sections and save juice. Combine grapefruit juice with pineapple juice and add enough water to make 5 cups.

    Heat 2 cups liquid to dissolve gelatin. Add rest of liquid to fruit.

    Mix well and spoon into grapefruit shells or put into shallow pan.

    Refrigerate until firm and serve one shell per person. Or cut gelatin in pan into squares and serve on lettuce.
