Fresh Pear Nut Cake

  • 2 c. sugar
  • 3 eggs
  • 1 1/2 c. oil
  • 3 c. flour
  • 1 tsp. soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 3 c. thinly sliced pears or apples
  • 1 c. chopped pecans

    Combine sugar, eggs and oil.

    Beat well.

    Combine flour, soda and salt.

    Add to sugar mixture, one cup at a time, mixing well after each addition.

    Stir in vanilla, cinnamon, pears and nuts. Spoon batter into well greased 10-inch Bundt pan or tube pan. Bake at 325° for 1 1/2 hours.

    Powdered sugar glaze if desired. Remove cake from pan when cool and glaze.
