- 1 lb. ripe plum tomatoes, peeled and coarsely chopped
- 4 scallions, finely chopped
- 1 medium garlic clove, minced
- 1 Tbsp. finely chopped cilantro (fresh coriander)
- 2 Tbsp. fresh lime juice
- 2 jalapeno or serrano chilies, finely chopped
- 1/2 tsp. Mexican oregano salt
Directions

1In a large bowl combine the tomatoes, scallions, garlic, cilantro and lime juice.

2If the tomatoes are not very juicy, gradually stir in up to 1/4 cup of cold water to moisten the mixture.

3Stir in the chilies and oregano; season with salt.
