- 1/2 an onion, chopped
- 1/2 packages of spinach, steamed
- 1 1/2 Tomato, chopped
- 2 eggs
- dash of semi skimmed milk
- pinch of salt
- dash of pepper
- 2 slices of bread, toasted and halved
- tsp of olive oil
- 2 tsp water
Directions

1Chop onions and tomatoes.

2Crack eggs into a bowl and whisk with milk.

3Preheat saucepan and add Olive oil.

4Put in chopped veg.

5On a moderate heat place spinach in another saucepan with 2 teaspoons of water.

6Cover and leave for 4 minutes.

7Fry the onions, tomatoes to your liking and add the spinach when ready.

8Keeping at a moderate temperature add the eggs, leave for twenty seconds and start to fold the mixture.

9Toast the bread to your liking, cut in half and ready them on a plate.

10Keep folding the mixture for 3-4 minutes.

11Add salt and pepper to taste.

12Once the mixture is to your liking, serve directly onto toast and enjoy!
