- 6 skinned pan-dressed catfish
- 2 tsp. salt
- 1/4 tsp. pepper
- 2 eggs
- 2 Tbsp. milk
- 2 c. cornmeal
Directions

1Sprinkle both sides of fish with salt and pepper.

2Beat eggs and blend in milk.

3Dip fish in the eggs and roll in cornmeal. Place fish in a heavy frypan which contains about 1/8-inch melted fat, hot but not smoking.

4Fry at moderate heat.

5When fish is brown on one side, turn and brown other side.

6Cooking time is about 10 minutes.

7Drain on absorbent paper.

8Serve immediately.
