- 1 medium fryer, cut up
- 3 to 4 c. vegetable oil
- salt and pepper
- 1 Tbsp. paprika
- 1 c. flour
Directions

1Put oil in a large skillet, preferably cast-iron.

2Heat on medium to high heat.

3Salt chicken slightly.

4In a medium size brown paper bag, put flour, a little salt and paprika.

5Shake well. Put in 4 or 5 pieces of chicken and shake to coat well.

6Test oil by dropping in a pinch of flour.

7If it sizzles, put in the chicken.

8Fry until light brown on bottom side.

9Turn and continue frying until color is uniform, about 15 minutes per side.

10Remove to paper towels and drain oil.

11Serve hot or cold.
