- 1 large eggplant
- 4 eggs
- 1/4 c. grated cheese
- 1 tsp. basil
- salt
- black pepper to taste
- oil for frying
Directions

1Make a batter with the eggs, basil, salt and pepper.

2Peel and slice the eggplant.

3Thin slices are preferable.

4Dip each slice in the batter and drop into heated oil in frying pan.

5Brown on both sides.

6Drain on paper towels and serve.
