- 1 egg, beaten
- 1 c. buttermilk
- 1 c. self-rising flour
- 1/3 c. corn meal
- 1/2 tsp. salt
- 6 green tomatoes, cut into 1/4-inch slices
- bacon drippings with a splash of vegetable oil
Directions

1Keep wet and dry ingredients separate.

2Mix egg and buttermilk in a shallow dish.

3Mix flour, cornmeal and salt in a shallow dish.

4Working in batches, dip tomato slices into egg mixture, allowing excess to drip back into dish.

5Coat with flour mixture. Fry in hot bacon drippings in a large skillet until browned, turning once with tongs.

6Transfer to colander to drain.

7Stand upright to prevent sogginess.
