- 1 to 2 lb. fresh okra
- 2 c. cornmeal (or flour)
- 1 tsp. salt
- 1 tsp. pepper
- 1 1/2 c. pan drippings or shortening, melted
Directions

1Place pan drippings or shortening in a large skillet.

2Wash the raw okra.

3Add the salt and pepper to the cornmeal (or flour). Mix well.

4Cut the okra into thick, circular rounds.

5Roll each okra round in the cornmeal or flour mixture.

6Fry each piece (as many as you can fit in a pan without the sides touching each other) in the hot grease.
