- 1 small tomato, finely chopped
- 1/2 medium yellow pepper, finely chopped
- 1/2 medium red onion, finely chopped
- 1 tbsp finely chopped fresh cilantro
- 1 tbsp olive oil
- 1 tbsp lime juice
- 1 None fresh small red Thai or serrano chili pepper, seeded and finely chopped
- 12 None oysters on the half shell
- 1/2 cup cornmeal
- 1/3 cup milk
- 1 None egg, lightly beaten
- None None Pinch cayenne pepper
- None None Vegetable oil, for deep-frying

1Preheat the oven to 350°F.

2For the salsa, combine tomato, pepper, onion, cilantro, olive oil, lime juice and chili pepper in a small bowl; season to taste.

3Remove oysters from shells; reserve oysters. Place shells on a baking pan. Heat in oven for 5 mins.

4Meanwhile, combine cornmeal, milk, egg and cayenne pepper in a medium bowl.

5Heat vegetable oil in a medium saucepan. Dip oysters in batter; deep-fry oysters, in batches, until lightly browned. Drain on paper towels. Return oysters to shells; top with salsa to serve.
