Fried Peach Pieces

- 3 c. fresh peaches, peeled and sliced
- 1 c. sugar
- 3 c. flour (self-rising)
- 1/2 c. water
- 6 Tbsp. shortening
Directions

1Place peaches in bowl; sprinkle 1/2 cup sugar over peaches and set aside for about 1 hour.

2Place peaches, 1/2 cup water and 1/2 cup sugar in saucepan.

3Slowly cook peaches down to pie filling consistency.

4If necessary, add 1 or 2 tablespoons cornstarch to thicken.

5Place 3 cups flour into a mixing bowl; cut in shortening with a fork.

6Slowly add 1 1/2 cups cold water; roll out on floured board.

7Roll out about 1/4-inch thick the size of saucer. Spoon 3 or 4 tablespoons pie filling into each round.

8Fold over and flute edges with a fork.

9Heat vegetable oil in electric skillet between 300° to 325°.

10Fry pies until golden brown on both sides.
