- 12 teaspoon black pepper
- 13 cup olive oil or 13 cup salad oil
- 2 large eggs, beaten
- 34 cup fine dry breadcrumb
- 34 cup grated parmesan cheese
- lemon slice (for garnish)
- parsley (for garnish)
Directions

1Wash quail& wipe dry.

2Rub with salt& pepper.

3Mix breadcrumbs& Parmesan cheese together.

4Dip quail in beaten eggs, then breadcrumb mixture.

5Fry in hot oil until quail is tender and browned on all sides.

6Serve garnished with lemon and parsley if desired.
