- 2 eggs, slightly beaten
- 1/2 c. chopped scallions, cut in 1/4-inch pieces
- 4 Tbsp. oil
- 1/2 tsp. salt
- 3 Tbsp. soy sauce (dark)
- 1 Tbsp. sugar
- 1/2 c. frozen or blanched fresh peas
Directions

1Heat small pan; add 1 tablespoon oil and dry scramble the eggs.

2Remove and set aside.

3Heat wok; add 3 tablespoons oil and 1/2 teaspoon salt.

4Add scallions; mix few times.

5Add rice and mix in thoroughly.

6Add sugar; mix.

7Add soy; mix.

8Add eggs, cut into small strips or pieces.
