  • 1 c. rice
  • 2 c. water
  • 3 to 4 green onions with tops or 3/4 to 1 c. chopped onions
  • ham or any cooked meat
  • 3 to 4 eggs
  • 3 to 4 Tbsp. oil
  • salt
  • pepper
  • soy sauce to taste

Directions

    Cook rice in 2 cups water until dry or cook ahead.

    In skillet, heat oil; saute onions and add meat.

    Cook about 2 minutes.

    Break eggs into onion mixture; let this cook a little, then scramble.

    Add salt and pepper, rice and soy sauce.

    Heat through.
