- 1 c. rice
- 2 c. water
- 3 to 4 green onions with tops or 3/4 to 1 c. chopped onions
- ham or any cooked meat
- 3 to 4 eggs
- 3 to 4 Tbsp. oil
- salt
- pepper
- soy sauce to taste
Directions

1Cook rice in 2 cups water until dry or cook ahead.

2In skillet, heat oil; saute onions and add meat.

3Cook about 2 minutes.

4Break eggs into onion mixture; let this cook a little, then scramble.

5Add salt and pepper, rice and soy sauce.

6Heat through.
