- 4 c. cooked rice
- 1 small onion, chopped
- soy sauce
- 1/2 c. diced, cooked ham, chicken or pork
- 1 c. grated carrots
- 1 small bell pepper, chopped
- 1/2 c. frozen green peas
- 2 eggs
- cooking oil
Directions

1Cook onion, carrots, pepper and peas in 1/4 cup cooking oil for about three minutes.

2Add meat; remove from pan.

3Add about 1/4 cup more oil and add rice.

4Cover on low heat for about three to four minutes.

5Add cooked vegetables to rice.

6Scramble eggs and add to rice.

7Season with soy sauce to your liking.
