- 8 c. yellow squash
- 1 stick butter or margarine
- 2 beaten eggs
- 1 chopped onion
- 1 tsp. salt
- 1 tsp. pepper
Directions

1Cook squash in water until tender; add butter, salt, pepper and chopped onion.

2Cook on top of stove in skillet until liquid is reduced, being careful not to burn.

3Remove from heat and cool. Add beaten eggs.

4Return to heat to thicken.

5Remove from heat and serve.
