- 12 large squash blossoms (pick when blossoms are just ready to open)
- 2 eggs, beaten
- 1 c. flour
- 1 c. water
- 1 tsp. salt
- 1/4 tsp. cayenne
- 1/2 tsp. turmeric
- 1/2 to 1 c. oil
Directions

1Mix batter, using eggs, flour, water, salt, cayenne and turmeric.

2Heat the oil in a heavy saucepan.

3Dip blossoms in batter until well-coated, then fry in hot oil (375°) until golden brown; takes less than a minute for each.

4Drain on paper towels and serve warm.
